Mix-it-Up Monday: Mo’s “Chi Chi CHIA Pudding” & GIVE-AWAY!

This week’s Mix-it-Up MONDAY proudly features Maura Knowles (Mo) of Mac-n-Mo’s for a healthy update on CHIA and a Morselicious Pudding Recipe. The Creator of Mac-n-Mo’s, Mo wears many hats, incl. her chef’s hat. She’s a healthy foods advocate, an actress, a screenwriter, a singer…and the list can go on. Basically she is an inspiration in living life to its fullest, healthy and happily. AND she’s also my partner in fighting (sugar) crime for our NUTSO-SWEET column on Fridays. 


Chia seeds
are an excellent vegetarian source of omega-3 fatty acids

And a serving of 2 tbsp. contains 6g of fiber, 3 g of protein, no sodium,

No sugar.

It is an ancient SUPERFOOD eaten by the Aztecs. I eat these every day.

One of my favorite ways to get my daily dose is from my chia pudding,

But please beware that there is a lot of fiber and too much chi chi chia

Can leave you feeling fuller than full with what I call a CHIA BELLY.

A little chia goes a long way for nutrition and taste!

I made Mo’s Chi Chi Chia Pudding and served it over fresh berries and Wheatabix. Oh, YUMMMM!!

Mo’s Chi Chi Chia pudding undressed – it’s great alone (without topping), too!! : )

Mo’s Chi Chi Chia Pudding

  • 2 cups milk of choice (I prefer coconut/almond-UNSWEETENED)
  • 3-4 tbsp chia seeds
  • 2-4 tsp cinnamon (depending on your taste preference)
  • 1 tsp nutmeg
  • 1.5 tsp vanilla

Pour all ingredients in a glass jar and screw lid on tightly. Shake it up.

Refrigerate. It will form into a gelatin consistency within 2 hours.

Enjoy as a pudding, topping or mix into your smoothies for

SUPER FOOD & fiber boost.

  1. i love chia seeds in my yogurt which i have for lunch everyday. it’s locally made grass fed yogurt that is out of this world delicious (sidehill farm in ashfield, MA). i start with some fresh fruit – whatever is in season and lately it’s been local strawberries – my FAV!!!. then, i add tahini, cinnamon, 1 tbsp chia and 1/2 cup granola that i make myself. YUM!!!!

  2. My stand-by chia seed recipe is chia seed pudding (chocolate-pb is the best!) but I’ve been looking into other ways to use them, too. Sprinkling them over salads adds a nice crunch!

  3. I have heard about how great chia seeds are for you and pets, but have yet to try them. Winning a package would be wonderful, and then I could try them and see if they are as good as people are saying.

  4. It is easy to incorporate chia seeds in your daily diet in smoothies, granola, fruit cups, dressings, soups, or baked goods. I am hooked on chia’s energy boost! Winning chia seeds would be fabulous to use creating more chia muffins!!! It is really so versatile and easy to use . . . love it!!

  5. I love chia seeds. I put them in my morning smoothies, and I’ve started my mom using them in her oatmeal!! I’m hoping they will give her a boost of energy to fight her fatigue. Miracle seeds!

  9. I bought a whole bunch of chia seeds and I have used them in my overnight oats. I recently saw that you can use them in your water with fruit! That is what I am going to be trying next, but I must say making homemade pudding and putting these in there also sound wonderful!

  10. Love my chia seeds in my yogurt everyday, along with organic fruit like strawberrires and blueberries. Plus we put Chia seeds in our protein shake smoothies. Just love them.

  14. I honestly don’t even really know that uch about chia seeds! I just kind of throw them on salads or in homemade bars that I make and such… but I don’t know any sorts of recipes with them so I love this pudding recipe! I am going to try it as soon as I can run out and get some more almond milk :)
